    Preheat oven and prepare potatoes

    Preheat the oven to 425°F (220°C). Scrub the russet potatoes under cold running water to remove all dirt. Pat them dry thoroughly with a clean towel. Using a fork, prick each potato all over (about 6–8 times) to allow steam to escape during baking.

    Coat potatoes

    Place the dried, pricked potatoes on a baking sheet. Drizzle 2 tablespoons olive oil evenly over the potatoes and roll them so the skin is coated. Sprinkle 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper over the potatoes, rubbing gently so the seasoning adheres to the skin.

    Bake

    Arrange potatoes on the baking sheet with space between them. Bake in the preheated oven for 45–60 minutes, turning once halfway through, until the skins are crisp and a paring knife or skewer slides into the center with little resistance. For medium potatoes expect about 50 minutes; larger potatoes may need up to 65 minutes.

    Rest

    Remove the potatoes from the oven and let them rest for 5 minutes to allow steam to settle inside, which makes them easier to split and fluff without drying out.

    Prepare toppings

    While potatoes bake or during the last 10 minutes of baking, prepare the toppings. Slice or crumble 4 slices of cooked bacon. Shred 1 cup cheddar cheese if not pre-shredded. Thinly slice 2 tablespoons chives. Measure out 4 tablespoons butter and 1/2 cup sour cream.

    Split and fluff

    When potatoes have rested, use a knife to make a lengthwise slit across the top of each potato. Gently press the ends toward each other to open the potato. Using a fork, fluff the interior flesh to create a light, airy texture.

    Assemble

    Place 1 baked potato on each plate. Immediately add 1 tablespoon (approx.) unsalted butter into the hot cavity so it melts into the flesh. Spoon 2 tablespoons sour cream on top, then sprinkle about 1/4 cup shredded cheddar, 1 slice worth of crumbled bacon, and 1/2 tablespoon sliced chives. Finish with a light pinch (about 1/8 tsp) of salt and a grind of black pepper to taste.

    Serve

    Serve the baked potatoes hot. If desired, return assembled potatoes to the oven for 2–3 minutes to melt the cheese before serving.
