Prepare prawns and bacon
Rinse prawns and pat dry with paper towels. If not already deveined, make a shallow cut along the back and remove the vein. Keep tails on for presentation. Cut each bacon slice in half crosswise so you have 24 shorter strips (one for each prawn).

Make marinade
In a medium bowl whisk together olive oil, lemon juice, minced garlic, paprika, cayenne, onion powder, oregano, thyme, salt, and black pepper until combined.

Marinate prawns
Place the bacon-wrapped prawns in a shallow dish or zip-top bag. Pour 2/3 of the marinade over them, reserving the rest for basting. Turn prawns to coat evenly. Refrigerate and marinate for 20–30 minutes (no more than 45 minutes) so the acid doesn't start to cook the prawns.

Assemble on skewers
If using wooden skewers, soak them in water for 20–30 minutes to prevent burning. Thread 4 bacon-wrapped prawns onto each skewer, piercing through the middle of each prawn so the bacon stays tight. This yields 6 skewers with 4 prawns each.

Preheat grill or oven
Preheat an outdoor grill to medium-high (about 400°F / 200°C) or preheat oven and set a wire rack over a rimmed baking sheet at 425°F (220°C). Oil the grill grates or lightly oil the wire rack.

Grill or roast
Place skewers on the grill or on the prepared rack in the oven. Cook 3–4 minutes per side, turning once or twice, until bacon is crisping and prawns are opaque and just cooked through (internal temp ~120–130°F / 49–54°C). Total cooking time will be 8–12 minutes depending on heat and bacon thickness. During the last 2–3 minutes brush reserved marinade over the prawns. If using brown sugar glaze, sprinkle or brush it on in the final minute and watch closely to avoid burning.

Rest and garnish
Remove skewers from heat and let rest 2 minutes. Transfer prawns to a serving platter, squeeze fresh lemon wedges over them, sprinkle with chopped parsley, and serve immediately. Offer extra lemon wedges on the side.
