Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring water to a boil and add 1 tsp of salt. Add the shell pasta and cook according to package instructions until al dente, usually about 7-9 minutes.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside.

Making the Cheese Sauce

    Create a Roux

    In the same pot used for the pasta, melt 4 tbs of butter over medium heat. Once melted, add 1 tbs of all-purpose flour and whisk continuously for about 1-2 minutes until the mixture is lightly golden.

    Add Milk

    Gradually whisk in 2 cups of milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 4-5 minutes.

    Incorporate the Cheese

    Reduce the heat to low and stir in 2 cups of shredded cheddar cheese and 4 oz of cream cheese. Mix until all the cheese is melted and the sauce is smooth.

    Season the Sauce

    Add 1 tsp of garlic powder, 1 tsp of onion powder, 1 tsp of paprika, 1 tsp of salt, and 1 tsp of black pepper. Stir well to combine.

Combining and Serving

    Mix Pasta and Sauce

    Add the drained shell pasta to the cheese sauce and stir gently until the pasta is fully coated.

    Prepare Topping (if using)

    In a small bowl, mix 1 cup of bread crumbs, 1 cup of grated Parmesan cheese, and 2 tbs of melted butter until combined.

    If adding the topping, transfer the pasta and cheese mixture to a baking dish. Sprinkle the breadcrumb mixture evenly on top. Bake in a preheated oven at 350°F (175°C) for about 20 minutes or until golden brown.
