Prepare the Lettuce

Carefully separate the gem lettuce leaves, wash them under cold water, and pat them dry with a paper towel. Set aside.

Marinate the Skirt Steak

Place the skirt steak in a bowl and pour the Korean BBQ marinade over it. Allow it to marinate for at least 30 minutes, preferably up to 2 hours, in the refrigerator.

Prepare the Vegetables

Thinly slice the cucumber and daikon radish into matchstick shapes. Set aside in a bowl.

Cooking the Steak

Grill the Skirt Steak

Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side, or until it reaches your desired level of doneness. Let it rest for 5 minutes before slicing.

Making the Dipping Sauce

Prepare the Ssamjang Sauce

In a small bowl, mix together ssamjang, sesame oil, and chili flakes until well combined. Adjust seasoning to taste.

Assembling the Wraps

Assemble the Wraps

Take a lettuce leaf and place a few slices of grilled skirt steak on top. Add some cucumber and daikon slices, then drizzle with ssamjang dipping sauce. Roll up the lettuce leaf to form a wrap.
