Method

Mussels Preparation

  1. 1

    Clean the Mussels

Rinse the blue mussels under cold running water, scrubbing the shells with a stiff brush to remove any dirt or barnacles. Remove the beards (the fibrous threads) by pulling them off with your fingers.

  2. 2

    Sauté Aromatics

In a large pot, melt 2 tablespoons of butter over medium heat. Add the minced garlic and chopped shallots, sautéing until they become translucent and fragrant, about 2-3 minutes.

  3. 3

    Cook the Mussels

Add the cleaned mussels to the pot along with the white wine. Cover the pot and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.

  4. 4

    Season and Garnish

Stir in the chopped parsley, and season with salt and black pepper to taste. Serve the mussels in a bowl with the broth.

Fries Preparation

  1. 5

    Prepare the Potatoes

Peel the potatoes and cut them into thin strips to make fries. Pat them dry with a clean towel to remove excess moisture.

  2. 6

    Heat the Oil

In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

  3. 7

    Fry the Potatoes

Carefully add the cut potatoes to the hot oil in batches, frying them until golden brown and crispy, about 5-7 minutes. Remove them using a slotted spoon and drain on paper towels.

  4. 8

    Season the Fries

While the fries are still hot, sprinkle them with salt to taste.

Baguette Preparation

  1. 9

    Slice the Baguette

Cut the baguette into slices or halves, depending on your preference.

  2. 10

    Spread Butter

Spread a thin layer of butter on the cut sides of the baguette.
