Chicken Marinade

In a large bowl, combine buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. For spicy Nashville chicken, add hot sauce. Mix well.

Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

In a separate bowl, combine flour, cornstarch, salt, black pepper, paprika, and cayenne pepper (if making spicy). Mix thoroughly.

Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the breading mixture, pressing gently to adhere.

In a large, deep skillet or Dutch oven, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
