    In a large bowl, combine buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. For spicy Nashville chicken, add hot sauce. Mix well.

    Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Breading

    In a separate bowl, combine flour, cornstarch, salt, black pepper, paprika, and cayenne pepper (if making spicy). Mix thoroughly.

    Coat the Chicken

    Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the breading mixture, pressing gently to adhere.

Frying

    Heat the Oil

    In a large, deep skillet or Dutch oven, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully place the breaded chicken pieces in the hot oil, frying in batches to avoid overcrowding. Fry for about 10-12 minutes or until golden brown and cooked through, turning occasionally.
