Method

Preparing the Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, salt, black pepper, and lemon juice. Add the salmon fillets and coat them well. Let marinate for at least 30 minutes.

    Grill the Salmon

    Preheat your grill to medium-high heat. Place the marinated salmon on the grill, skin-side down. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and has grill marks.

Making the Pea Puree

    Cook the Peas

    In a saucepan, bring water to a boil. Add the peas and cook for about 2-3 minutes until tender. Drain and set aside.

    Blend the Pea Puree

    In a blender or food processor, combine the cooked peas, mint leaves, garlic, olive oil, salt, and black pepper. Blend until smooth. Add a little water if needed to achieve desired consistency.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the corn, green beans, zucchini, and cherry tomatoes. Season with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.
