Marinating the Chicken

Prepare the Marinade
In a large bowl, combine buttermilk, salt, black pepper, garlic powder, paprika, and for spicy, hot sauce and cayenne pepper. Mix well.

Marinate the Chicken
Add the chicken pieces into the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.
Preparing the Breading

In a separate bowl, whisk together the flour, cornstarch, salt, black pepper, garlic powder, paprika, and for spicy, cayenne pepper.
Frying the Chicken

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

Bread the Chicken
Remove chicken pieces from the marinade, allowing excess to drip off. Dredge in the breading mixture, ensuring an even coat.

Fry the Chicken
Carefully lower the breaded chicken pieces into the hot oil. Fry in batches if necessary to avoid overcrowding. Cook for about 12-15 minutes, turning occasionally, until golden brown and internal temperature reaches 165°F (75°C).

Once cooked, remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil. Let it rest for 5 minutes before serving.
