Preparing Lobster Tails

Prepare Lobster Tails
Start by thawing the lobster tails if they are frozen. Use kitchen scissors to cut down the back of the shell and gently pull the lobster meat out, leaving it attached at the base. Lay the meat on top of the shell.

Season the Lobster
In a bowl, mix flour, cornstarch, garlic powder, paprika, salt, and black pepper. Dredge each lobster tail in the mixture, ensuring it’s fully coated.
Frying Process

Prepare the Breading Station
In a shallow bowl, whisk together the eggs and milk. Dip the coated lobster tails into the egg mixture, then back into the flour mixture for a second coating.

Fry the Lobster Tails
Carefully place the lobster tails in the hot oil, frying for about 3-4 minutes or until golden brown. Remove them and place on paper towels to drain the excess oil.
Making Honey Butter

Prepare Honey Butter
In a small bowl, soften the unsalted butter. Mix in honey and a pinch of salt until well combined. Set aside.
Making Lavender Salt

In a small bowl, combine sea salt and dried lavender flowers. Mix well and set aside.
