Fish

English Pea Puree

Method

Fish

  1. 1

    Prepare the Batter

In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the Karbach Love Street Kolsch beer until smooth and combined. Let the batter sit for about 15 minutes.

  2. 2

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the haddock fillets.

  3. 3

    Fry the Haddock

Dredge each haddock fillet in the batter, allowing excess to drip off. Carefully lower the fillets into the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Tartar Sauce

  1. 4

    Mix the Ingredients

In a bowl, combine the mayonnaise, dill pickles, capers, lemon juice, fresh dill, salt, and black pepper. Mix well until all ingredients are incorporated. Refrigerate until ready to serve.

English Pea Puree

  1. 5

    Cook the Peas

In a saucepan, melt the butter over medium heat. Add the peas and broth, and bring to a simmer. Cook for about 5-7 minutes until peas are tender.

  2. 6

    Blend the Puree

Transfer the peas and their cooking liquid to a blender or food processor. Blend until smooth. Season with salt and black pepper to taste.

Fries

  1. 7

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips to form fries. Rinse in cold water and pat dry with a towel.

  2. 8

    Fry the Fries

In the same pot or fryer used for the fish, heat the vegetable oil to 350°F (175°C) again. Fry the potatoes in batches for about 4-5 minutes until golden and crispy. Remove and drain on paper towels, then season with salt.
