Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and season with salt and black pepper.

Slice the Sausage and Bacon
Slice the andouille sausage and chop the applewood smoked bacon into small pieces.
Cooking

Cook the Bacon
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the fat in the pot.

Brown the Sausage
Add the sliced andouille sausage to the pot and cook until browned. Remove and set aside with the bacon.

Add Garlic and Chicken
Stir in the minced garlic and chicken pieces. Cook for another 5-7 minutes until chicken is browned.

Combine Ingredients
Return the bacon and sausage to the pot. Add the chicken broth, water, Cajun seasoning, bay leaves, and salt to taste. Bring to a boil.

Simmer the Gumbo
Reduce heat and let it simmer uncovered for 30-40 minutes, stirring occasionally.

Cook the Rice
While the gumbo is simmering, cook the long-grain white rice according to package instructions.
Serving

Serve the Gumbo
Remove the bay leaves from the gumbo. Serve hot over a scoop of rice, and garnish with sliced green onions and chopped parsley.
