Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.

Dredge the Calamari
Coat the calamari rings in the flour mixture, ensuring they are fully covered.

Prepare the Oil
In a deep pot or fryer, heat vegetable oil to 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Chili Remoulade Preparation

Combine Ingredients
In a medium bowl, mix together the mayonnaise, Dijon mustard, sriracha, lemon juice, garlic powder, salt, and black pepper until smooth.

Adjust Seasoning
Taste the remoulade and adjust seasoning as needed, adding more sriracha for heat or salt for flavor.

Arrange the fried calamari on a serving platter and garnish with sliced fresno chiles.
