Preparing Pickled Mushrooms

Make the Pickling Liquid
In a saucepan, combine white vinegar, water, sugar, salt, garlic cloves, dried oregano, and bay leaves. Bring to a boil over medium heat, stirring until the sugar and salt have dissolved.

Cooking Bone-in Filet Chops

Season the Chops
Pat the bone-in filet chops dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Chops
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the seasoned chops and sear for about 4-5 minutes on each side, or until they reach your desired doneness.

Rest the Chops
Remove the chops from the skillet and let them rest on a plate for about 5 minutes before serving.
Charred Scallions

Prepare the Scallions
Trim the root ends of the scallions and rinse them under cold water.

Char the Scallions
In the same skillet used for the chops, add 1 tablespoon of olive oil over medium heat. Add the scallions and cook for about 2-3 minutes, turning occasionally, until they are charred and tender. Season with salt to taste.
