Method
Musubi & Rice
Rinse the short-grain rice in a fine-mesh sieve under cold running water, swirling with your hand until the rinse water runs nearly clear (about 4–6 rinses). Drain for 10 minutes.
Combine the rinsed rice and 2.2 cups water in a rice cooker or medium pot. If using a pot, bring to a boil over medium-high heat, then reduce to low, cover, and simmer 15 minutes. Remove from heat and let rest, covered, 10 minutes.
While the rice cooks, whisk together rice vinegar, sugar, and 1 tsp salt until dissolved. Transfer cooked rice to a large shallow bowl, drizzle the vinegar mixture over rice, and fold gently with a rice paddle or wooden spoon to season and cool slightly. Keep covered to stay warm until assembling.
Cut each nori sheet in half crosswise to form two roughly 4x6-inch rectangles (size to wrap the musubi). Set nori pieces on a tray, shiny side down.
Spam & Coating
Open the Spam can, remove meat, and slice lengthwise into 6 equal slices (about 1/2-inch thick). Pat dry with paper towels.
Make a quick glaze: in a small bowl combine soy sauce, mirin, and brown sugar. Stir until sugar dissolves.
Set up a breading station: shallow bowl with flour (season with the 1/2 tsp black pepper), a second bowl with beaten eggs (whisk the 3 eggs), and a third bowl with panko breadcrumbs.
Working one slice at a time, dredge a glazed Spam slice lightly in flour (shake off excess), dip into beaten egg, then press into panko to coat completely, pressing gently so panko adheres. Repeat for all slices.
Optional: if you want extra crispness, place the fried Spam slices on a baking sheet and bake in a 375°F (190°C) oven 4–6 minutes to finish; otherwise proceed to assemble.
Assembly & Garnish
Place a nori rectangle on a clean work surface. If using a musubi mold, position it centered on the nori (open side up). If not using a mold, shape rice by hand using wet fingers and gentle pressure.
Scoop about 1/3 cup of seasoned rice into the mold (or form on nori). Press rice evenly into a compact 2x3-inch block using the mold’s press or the back of a spoon. Remove the mold or lift formed rice gently off the press, leaving rice on nori.
Place one crispy, panko-coated Spam slice on top of the rice block. For a layered Dragon Crunch effect, you may slightly overlap two thin halves (optional).
Fold the nori tightly around the rice and Spam so the seam is on the bottom. If needed moisten the nori edge with a little water to seal.
Drizzle about 1 to 1.5 tablespoons Katsu sauce over the Spam on each musubi. Mix the Japanese mayonnaise with sriracha (if using) and drizzle about 1/2 tablespoon over each for a creamy contrast.
Garnish with thinly sliced scallions and a light sprinkle of toasted sesame seeds. Repeat assembly for remaining pieces (should make 6 musubi).
Serve warm or at room temperature. For best texture, eat within an hour so the panko remains crisp; if storing, keep rice and Spam separate and assemble just before serving.
