Cook rice

Rinse 3 cups rice under cold water until water runs mostly clear. Drain. Combine rinsed rice, 3.25 cups water and 1/2 tsp salt in a medium saucepan. Bring to a boil over high heat, then reduce to low, cover and simmer 15 minutes. Turn off heat and let sit, covered, 10 minutes. Fluff with fork and stir in 1 tsp butter if using. Portion into two scoops per plate (about 2 cups cooked total).

Macaroni salad

Use 1 scoop of prepared macaroni salad (about 1/2 to 3/4 cup). If making from scratch, prepare separately and chill; add to plate cold alongside rice.

Hamburger Patties & Gravy

Make patties

In a bowl combine 1 lb ground beef, 1/4 cup finely diced onion, 1/4 cup bread crumbs, 1 beaten egg, 1 tbsp Worcestershire, 1 tsp kosher salt and 1/2 tsp black pepper. Mix gently until combined; do not overwork. Divide into two equal portions and shape into slightly flattened patties about 3/4-inch thick (they will shrink).

Cook patties

Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. When hot, add patties and cook 3-4 minutes per side for medium (adjust to desired doneness). Remove patties to a plate and tent with foil to keep warm. Reserve pan drippings in skillet.

Make gravy

Reduce heat to medium and add 1 tbsp unsalted butter to the same skillet with drippings. Once melted, sprinkle 1.5 tbsp flour and whisk to form a roux, cooking 1-2 minutes until light golden (don’t let burn). Slowly whisk in 1.5 cups beef broth, scraping browned bits from pan. Add 1 tbsp soy sauce and 1/4 tsp black pepper. Simmer 3-5 minutes until thickened to a gravy that coats a spoon. Taste and adjust salt/pepper. If gravy is too thick, add a splash more water or broth.

Combine patties and gravy

Return patties to skillet and spoon gravy over them to warm through for 1-2 minutes so flavors meld.

Fry eggs

Heat a nonstick skillet over medium-low and add 1 tsp oil or butter. Crack 2 eggs into skillet and cook sunny-side up until whites are set but yolks remain runny, about 3-4 minutes. Season with 1/4 tsp salt. For over-easy, flip gently and cook 30 seconds more.

Garnish & Assembly

Assemble the plate: On each plate place two scoops of rice (as prepared) on one side and one scoop of macaroni salad on the other side. Set a hot hamburger patty over the rice and spoon 2–3 tbsp of gravy over the patty. Top the patty with a fried egg. Spoon additional gravy around the plate if desired. Garnish with sliced green onions and a drizzle of ketchup or shoyu if desired.
