Prepare seasoned rice
While rice is hot, transfer 3 cups cooked short-grain rice to a large bowl. Gently fold in 1 tablespoon rice vinegar, 1 teaspoon sugar, and 1 teaspoon salt until evenly combined. Cover to keep warm.
Prepare SPAM
Remove SPAM from the can and slice crosswise into 6 even slices (about 1/3"–1/2" thick). Reserve extra slices – for a trio of musubi you will use 3 slices; the other 3 can be saved for seconds.
Make glaze
In a small bowl combine 3 tablespoons soy sauce, 1 tablespoon mirin, 2 tablespoons brown sugar (or honey), and 1 teaspoon sesame oil. Stir until sugar dissolves to make a glossy glaze.
Pan-fry SPAM
Heat 1 teaspoon neutral oil in a nonstick skillet over medium heat. Add SPAM slices and fry 1–2 minutes per side until lightly browned. Pour glaze into the pan and cook another 30–45 seconds per side, spooning glaze over slices until caramelized and slightly sticky. Remove from heat and set on a plate lined with foil or parchment.
Cut nori and assemble
Cut 1 full nori sheet into three strips approximately the width of your SPAM slice. If using a musubi mold: place a piece of plastic wrap in the mold, add a handful (~1/2 cup) of seasoned rice, press down to form a rectangle, place a glazed SPAM slice on top, add another light layer (~1/4 cup) of rice if you like (or leave just SPAM on rice), then wrap a nori strip around and press to seal. If assembling by hand: wet your hands to prevent sticking, form 1/2 cup rice into a compact rectangle, top with SPAM, and wrap nori around, sealing the edge with a few drops of water.
Finish and garnish
Sprinkle toasted sesame seeds and optional furikake on the exposed rice or SPAM. If you want the nori crisper, briefly toast the seam-side down on the skillet 5–10 seconds. Repeat to make 3 musubi. Let rest 2 minutes so glaze sets, then wrap each musubi in plastic wrap if packing for takeout.
Iced Green Tea (3 servings)
Brew: Steep 3 green tea bags in 3 cups hot water for 2–3 minutes (avoid oversteeping to prevent bitterness). Remove tea bags.
Cool & sweeten: Stir in 2 tablespoons simple syrup while tea is warm, if desired. Let cool to room temperature.
