Prepare the Dumpling Filling
In a mixing bowl, combine the chopped shrimp, shiitake mushrooms, grated carrot, green onions, minced garlic, and minced ginger. Add soy sauce, sesame oil, salt, and ground white pepper. Mix well until combined.

Assemble Shumai
Take a wonton wrapper and place about 1 tablespoon of the filling in the center. Gather the edges of the wrapper and gently pinch them together to form a cup shape, leaving the top open.

Steam the Shumai
Prepare a steamer by lining it with parchment paper or cabbage leaves to prevent sticking. Place the dumplings in the steamer, ensuring they are not touching. Steam over boiling water for about 10-12 minutes, or until the shrimp is cooked through.

Serve the Shumai
Serve the steamed shumai hot with mustard or your preferred dipping sauce.
