Burger Buns

    Prepare the Dough

    In a large bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until frothy. Add olive oil, salt, and flour gradually, mixing until a dough forms.

    Knead and Rise

    Knead the dough on a floured surface for about 8-10 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

    Shape Buns

    Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball, then flatten slightly. Place on a baking sheet lined with parchment paper.

    Second Rise

    Cover the shaped buns and let them rise for another 30 minutes. Preheat the oven to 375°F (190°C).

    Bake

    Brush the tops with the beaten egg for a golden finish. Bake in the preheated oven for 15-20 minutes or until golden brown. Let cool.

    Prepare the Patties

    In a bowl, mix the ground beef with salt and black pepper. Form into 4 equal patties.

    Cook the Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for 4-5 minutes on each side or until cooked to your desired doneness.

French Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into fries, about 1/4 inch thick.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Season

    Sprinkle with salt to taste while still hot.

Assemble the Burger

    Build the Burger

    On the bottom half of the grilled bun, place the cooked burger patty, top with garlic cheese curds, fried onions, and pickles. Place the top bun over the toppings.

    Serve

    Serve the Eastside Burger hot with a side of homemade French fries.
