Roast the Turkey
Place the turkey breast-side up on a rack in a roasting pan. Roast in the preheated oven for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). Baste occasionally with drippings.

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for 20-30 minutes before carving.

Make the Gravy
In a saucepan, combine the turkey drippings with flour over medium heat, whisking until smooth. Gradually add chicken broth and bring to a boil. Cook until thickened, about 5-7 minutes. Season with salt and pepper.

Cook the Potatoes
Peel and chop the potatoes into chunks. Boil in salted water until tender, about 20 minutes. Drain.

In a large bowl, combine the drained potatoes with butter and milk. Mash until smooth and creamy. Season with salt and pepper to taste.

Combine Stuffing
In a large bowl, mix sautéed vegetables with bread cubes, chicken broth, sage, and thyme. Stir until combined.

Assemble the Dinner
Slice the roasted turkey and layer it on slices of white bread. Top generously with homemade gravy. Serve alongside mashed potatoes and stuffing.
