Ice Cream Base

    Prepare the Ice Cream Base

    In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and salt. Heat over medium heat, stirring frequently, until the mixture is hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and frothy. Slowly add a small amount of the hot cream mixture to the egg yolks, whisking constantly to temper them.

    Combine Mixtures

    Gradually pour the tempered egg yolk mixture back into the saucepan with the cream mixture, stirring constantly. Cook over medium heat until the mixture thickens slightly and coats the back of a spoon, about 5-7 minutes.

    Remove the saucepan from the heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate for at least 4 hours or overnight.

Churning and Freezing

    Churn the Ice Cream

    Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    If making Spumoni, fold in the chopped pistachios, cherries, and chocolate chips during the last few minutes of churning.
