Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Gradually mix the flour into the eggs with a fork until a dough begins to form. Knead the dough on a lightly floured surface for about 5-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Meat Filling

    In a skillet over medium heat, add a little oil and sauté the chopped onion until translucent. Add minced garlic and ground beef. Cook until the meat is browned. Stir in Italian seasoning, salt, black pepper, and Parmesan cheese. Remove from heat and let cool.

Ricotta Cheese Filling Preparation

    Prepare the Ricotta Filling

    In a mixing bowl, combine ricotta cheese, cooked spinach, Parmesan cheese, salt, black pepper, and nutmeg. Mix until well blended.

Ravioli Assembly

    Roll out the Dough

    After resting, divide the dough into four pieces. Roll out one piece at a time into thin sheets using a pasta machine or rolling pin. Aim for about 1/16 inch thickness.

    Fill the Ravioli

    Place teaspoons of meat filling or ricotta filling on one sheet of dough, spacing them about 2 inches apart. Moisten the edges of the dough with water, then fold the dough over to create a pocket. Press down around each filling to seal, making sure there are no air pockets.

    Cut the Ravioli

    Use a knife or ravioli cutter to cut out the ravioli. Transfer to a floured surface and repeat the process with the remaining dough and fillings.

Sauce Preparation

    Make the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in crushed tomatoes, Italian seasoning, salt, and black pepper. Simmer for 15 minutes.

Cooking the Ravioli

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.

Serving

    Serve the Ravioli

    Plate the cooked ravioli and top with the prepared sauce. Garnish with additional Parmesan cheese if desired. Enjoy!
