Prepare the Egg Mixture

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into small pieces.

    In the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Mix Eggs and Ingredients

    In a bowl, whisk together the eggs and sour cream until well combined. Stir in the chopped bacon, sautéed onion, ham, and cheddar cheese.

Cook the Eggs

    Scramble the Eggs

    In the skillet over medium-low heat, pour in the egg mixture. Cook gently, stirring occasionally, until the eggs are just set and creamy. This should take about 5-7 minutes.

Prepare the Hash Browns

    Peel and grate the potatoes. Rinse under cold water and pat dry with a towel. In a separate skillet, heat vegetable oil over medium-high heat. Add the grated potatoes, salt, and black pepper, and cook until golden brown and crispy, about 5-6 minutes per side.

Prepare the Toast
