Pasta Dough

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it. Add the olive oil. Using a fork, gradually mix the flour into the eggs until a shaggy dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Spinach

    In a skillet over medium heat, sauté the fresh spinach until wilted. Remove from heat and allow to cool slightly. Chop finely and squeeze out excess moisture.

    Mix the Filling

    In a bowl, combine the ricotta cheese, chopped spinach, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix until well combined.

Assembly

    Roll Out the Dough

    Divide the rested pasta dough into four equal parts. Roll out each part using a pasta machine or a rolling pin until thin (about 1/16 inch thick).

    Fill the Ravioli

    Place small mounds (about 1 tablespoon) of filling on one half of the rolled-out dough, leaving space between each mound. Brush the edges with water, fold the dough over to enclose the filling, and press to seal.

    Cut the Ravioli

    Using a knife or a ravioli cutter, cut between the mounds to create individual ravioli. Ensure the edges are sealed properly.

Cooking

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-4 minutes or until they float to the top. Remove with a slotted spoon and set aside.

    Prepare the Sauce

    In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add crushed tomatoes, basil, salt, and black pepper. Simmer for 10-15 minutes.

    Add the cooked ravioli to the sauce and gently toss to coat. Cook for an additional 1-2 minutes to heat through.
