Method

Cooking the Quinoa

  1. 1

    Rinse the Quinoa

Place 1 cup of quinoa in a fine-mesh strainer and rinse it under cold water for about 1-2 minutes to remove bitterness.

  2. 2

    Cook the Quinoa

In a saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the broth is absorbed.

Preparing the Vegetables

  1. 3

    Chop the Vegetables

While the quinoa is cooking, chop the red bell pepper into small cubes and rinse the chickpeas if using canned. Set aside.

  2. 4

    Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped red bell pepper and sauté for about 3-4 minutes until softened.

  3. 5

    Add Chickpeas and Spinach

Add 1 cup of chickpeas and 2 cups of spinach to the skillet. Cook for an additional 3-5 minutes, stirring frequently until the spinach is wilted.

Combining and Serving

  1. 6

    Mix Quinoa with Vegetables

Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir until everything is well combined.

  2. 7

    Season the Mixture

Add 1 teaspoon of cumin, salt, and black pepper to taste. Stir to incorporate the spices evenly.

  3. 8

    Garnish and Serve

Remove from heat and garnish with fresh parsley and a drizzle of lemon juice. Serve warm.
