    Prepare the Ingredients

    Dice the onion, carrots, and celery into small pieces. Mince the garlic cloves and set aside.

    Rinse the Wild Rice

    In a fine mesh strainer, rinse the wild rice under cold water until the water runs clear. This helps remove excess starch.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.

    Add Garlic

    Add the minced garlic to the pot and sauté for an additional 1-2 minutes until fragrant.

    Cook the Chicken

    Push the vegetables to the side of the pot and add the chicken breasts. Brown the chicken for about 4-5 minutes on each side.

    Combine Ingredients

    Add the rinsed wild rice, chicken broth, dried thyme, salt, black pepper, and bay leaf to the pot. Stir everything together.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 45 minutes, or until the rice is tender and the chicken is cooked through.

Finishing Touches

    Shred the Chicken

    Once cooked, remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir to combine.

    Garnish and Serve

    Remove the bay leaf and stir in chopped fresh parsley. Serve warm.
