In a large bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add egg yolks and white wine (or vinegar). Mix until a dough forms.

Turn the dough out onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

After resting, roll out the dough to about 1/8 inch thickness. Cut into circles about 4 inches in diameter.

Fry the Shells
Heat oil in a deep fryer or large pot to 375°F (190°C). Wrap each dough circle around a cannoli tube, sealing the edges with a bit of water. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.
