    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Frying

    In a large pot, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of potato; it should sizzle immediately.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This will help achieve maximum crispiness.

    Fry the Potatoes

    Carefully add a handful of the dried potato strips into the hot oil, making sure not to overcrowd the pot. Fry in batches for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
