Cocktail Preparation

Prepare the Pineapple Juice
Start by charring a slice of fresh pineapple on a grill or stovetop until caramelized. Allow it to cool, then blend it until smooth, and strain to obtain a clear juice.

Mix the Ingredients
In a cocktail shaker, combine 2 oz of mezcal, 1 oz of charred pineapple juice, 0.5 tsp of chili powder, 0.5 oz of orange liqueur, and 1 oz of fresh lime juice.

Shake the Cocktail
Add ice to the shaker and shake vigorously for about 15 seconds until well chilled.

Add Bitters
Add 2 dashes of mole bitters to the shaker and gently stir to incorporate.

Strain into Glass
Strain the mixture into a chilled cocktail glass or rocks glass filled with ice.

Top the cocktail with a charred pineapple slice on the rim, a lime wheel, and a sprinkle of fresh cilantro leaves for an aromatic finish.
