Ingredients

Preparation

Mashing

1. Heat Water

In a large pot, heat 5 liters of filtered water to around 68-70°C (155-158°F).

2. Add Malts

Once the water is heated, add 4 cups of Pilsner malt and 0.5 cups of caramel malt to the pot.

3. Mash

Maintain the temperature for about 60 minutes, stirring occasionally.

4. Sparging

After mashing, sparge with hot water to collect around 5-6 liters of wort.

Boiling

5. Boil Wort

Bring the collected wort to a boil.

6. Add Hops

Once boiling, add 1 oz of Hallertau hops and boil for 60 minutes.

7. Add Saaz Hops

With 15 minutes left in the boil, add 0.5 oz of Saaz hops.

Cooling and Fermentation

8. Cool Wort

After boiling, cool the wort quickly to around 20°C (68°F) using an immersion chiller or an ice bath.

9. Pitch Yeast

Transfer the cooled wort to a fermentation vessel and pitch 1 packet of lager yeast.

10. Ferment

Seal the fermentation vessel and allow it to ferment at around 10-12°C (50-54°F) for about 2 weeks.

Bottling

11. Prepare Priming Sugar

Boil 0.75 cups of corn sugar in 2 cups of water for 10 minutes to sterilize.

12. Bottle Beer

Add the cooled priming sugar solution to the fermented beer and bottle it in sanitized bottles.

13. Cap Bottles

Cap the bottles and store them at room temperature for carbonation for about 1-2 weeks.
