Spaghetti Carbonara Recipe

Pasta Cooking

    Boil Water

    In a large pot, bring 4-5 liters of salted water to a boil.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of pasta water and set aside.

    Drain Pasta

    Drain the spaghetti and set aside.

Pancetta Preparation

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Carbonara Sauce Preparation

    Mix Sauce Ingredients

    In a mixing bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta and mix well to combine.

    Add Sauce

    Remove the skillet from heat and quickly pour in the egg and cheese mixture, tossing vigorously to combine. The residual heat from the pasta will cook the eggs.

    Adjust Consistency

    If the sauce is too thick, gradually add reserved pasta water, a few tablespoons at a time, until the desired creaminess is achieved.

    Serve

    Serve immediately, garnished with extra Pecorino Romano cheese and freshly cracked black pepper to taste.
