Cook Pasta

    Boil Water

    In a large pot, bring water to a boil over high heat. Add 1 tablespoon of salt.

    Cook Pasta

    Add 8 oz of pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside.

Prepare Vegetables

    Chop Vegetables

    While the pasta is cooking, chop the bell pepper, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes.

    Sauté Vegetables

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Vegetables

    Add the chopped bell pepper, zucchini, carrot, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until vegetables are tender.

Combine and Serve

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss gently to combine.

    Add Sauce and Season

    Stir in 2 tablespoons of lemon juice, 1 cup of grated Parmesan cheese, and 1 teaspoon of black pepper. Toss until everything is well coated.

    Garnish and Serve

    Remove from heat, stir in 1 cup of fresh basil leaves, and serve immediately.
