Prepare Gelatin
In a small bowl, combine the gelatin powder and cold water. Let it sit for about 5-10 minutes to bloom.

Heat Cream Mixture
In a saucepan over medium heat, combine heavy cream, whole milk, and granulated sugar. Stir until the sugar dissolves and the mixture is hot but not boiling.

Add Vanilla and Gelatin
Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin, mixing until the gelatin is completely dissolved.

Pour and Chill
Pour the mixture into individual serving cups or ramekins. Refrigerate for at least 4 hours, or until set.
Berry Sauce

Prepare Berries
In a saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Cook Sauce
Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 10-15 minutes.

Cool and Serve
Remove from heat and let the sauce cool to room temperature. Serve over the chilled panna cotta.
