Pie Crust

Method

Pie Crust

  1. 1

    Prepare the Pie Crust

In a large bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

  2. 2

    Form the Dough

Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling

  1. 3

    Cook Fillings

In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and chopped onion, and sauté until the onion is translucent.

  2. 4

    Mix in Seafood

Add the fresh oysters and clams to the skillet and cook for about 3-5 minutes until they are just cooked through.

  3. 5

    Combine Ingredients

Stir in the heavy cream, lemon juice, chopped parsley, and season with salt and black pepper to taste. Remove from heat and let the mixture cool.

Pierogie

  1. 6

    Prepare the Pierogie Dough

In a pot, boil the cubed potatoes until tender. Drain and mash the potatoes, then mix in the ricotta cheese, egg, and salt until smooth.

  2. 7

    Form Pierogies

On a floured surface, roll out the pierogie dough (made from flour and water) to about 1/8 inch thick. Cut out circles using a cookie cutter or glass. Place a tablespoon of the potato filling in the center, fold over, and seal the edges well.

  3. 8

    Boil Pierogies

Bring a pot of salted water to a boil. Carefully drop in the pierogies and cook until they float to the surface, about 3-4 minutes. Remove and set aside.

Assembly and Baking

  1. 9

    Assemble the Pie

Preheat your oven to 375°F (190°C). Roll out one disk of pie dough and fit it into a pie pan. Pour in the seafood filling, then arrange the boiled pierogies on top.

  2. 10

    Top with Dough

Roll out the second disk of pie dough and place it over the top of the pie. Seal the edges and cut slits for ventilation.

  3. 11

    Bake the Pie

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown. Let cool slightly before serving.
