Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Batter
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika.

Coat the Calamari
Dip each calamari ring into the wet mixture, then dredge it in the flour mixture, ensuring it is well-coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Spices
Stir in the crushed tomatoes, oregano, dried basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally, until thickened.

Finish with Fresh Basil
Stir in the chopped fresh basil just before serving, and adjust seasoning to taste.
