Method

Preparation of the Soup Base

  1. 1

    Cook the Potatoes

Peel and chop the potatoes into small pieces. Place them into a large pot with the vegetable broth. Bring to a boil and then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

  2. 2

    Sauté the Aromatics

In a separate pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

  3. 3

    Combine Ingredients

Once the potatoes are cooked, add the sautéed onion and garlic mixture to the pot with the potatoes. Stir in the salt, black pepper, and lemon juice. Let it simmer for another 5 minutes.

Blending and Chilling the Soup

  1. 4

    Blend the Soup

Using an immersion blender, blend the soup until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches until smooth.

  2. 5

    Chill the Soup

Transfer the blended soup to a bowl or container. Cover and refrigerate for at least 2 hours, or until chilled.

Serving the Soup

  1. 6

    Serve with Garnishes

Ladle the chilled potato soup into bowls. Top each bowl with a dollop of sour cream, a sprinkle of caviar, and a garnish of chopped chives and fresh dill. Serve immediately.
