Chilled Potato Soup Recipe

Soup Preparation

    Cook the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.

    Add Potatoes and Broth

    Add the diced potatoes to the pot, followed by the vegetable broth. Bring to a boil and then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.

    Blend the Soup

    Once the potatoes are tender, remove the pot from the heat. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup to a regular blender in batches.

    Add Cream and Season

    Stir in the heavy cream, salt, and black pepper. Mix well to combine, and taste to adjust seasoning if necessary.

    Chill the Soup

    Allow the soup to cool to room temperature, then cover and refrigerate for at least 2 hours, or until well chilled.

Garnishing

    Prepare Garnish

    Just before serving, finely chop the fresh dill and chives.

    Serve with Caviar

    Ladle the chilled potato soup into bowls. Top each serving with a spoonful of caviar and a sprinkle of chopped dill and chives.
