Preparation of Ponzu Sauce

Make the Ponzu Sauce
In a bowl, combine soy sauce, yuzu juice, rice vinegar, mirin, and bonito flakes. Stir well to mix all the ingredients.

Strain the Sauce
Let the ponzu sauce sit for a few minutes, then strain it through a fine sieve to remove the bonito flakes.

Add Aromatics
Slice scallions thinly and add them to the ponzu sauce along with sesame oil. Mix well and set aside.
Cooking Romanesco Cauliflower

Prepare the Romanesco
Remove the leaves from the Romanesco cauliflower and cut it into florets.

Blanch the Cauliflower
Bring a pot of salted water to a boil. Add the Romanesco florets and blanch for about 2-3 minutes until tender but still vibrant in color. Drain and transfer to an ice bath to stop the cooking.

Cooking Bluefin Tuna

Prepare the Tuna
Pat the Bluefin tuna steaks dry with paper towels. Season both sides with salt and black pepper.

Sear the Tuna
Heat a non-stick skillet over high heat. Add a small amount of oil. Once hot, add the tuna steaks and sear for about 1-2 minutes on each side for medium-rare, adjusting the time based on your desired doneness.

Rest the Tuna
Remove the tuna from the skillet and let it rest for a couple of minutes before slicing.
Assembly

Plate the Dish
On a plate, arrange the sautéed Romanesco cauliflower. Place the sliced Bluefin tuna on top.

Add Grapefruit
Segment the grapefruit and scatter the segments over the tuna and cauliflower.

Drizzle Ponzu
Drizzle the ponzu sauce over the entire dish and finish with a sprinkle of microgreens.

Serve immediately with additional ponzu sauce on the side.
