Prep & Heat

Bring components to serving temperature

Remove sliced turkey and stuffing from the refrigerator 15–20 minutes before assembling so they come closer to room temperature for even heating and better texture.

Preheat a skillet or griddle over medium heat (about 350°F / 175°C) or heat a panini press.

Assemble Sandwich

Butter and toast bread

Lightly spread softened butter on the outside faces of both bread slices. Place bread butter-side-down on the hot skillet or griddle and toast 1–1.5 minutes until golden and crisp. Flip briefly (30–45 seconds) if you prefer both sides crisp. Remove and set toasted side down on a clean board.

Mix mayo and hot sauce

In a small bowl combine mayonnaise and 1 tsp hot sauce, stirring until uniform. Taste and adjust heat by adding up to 1/2 tsp more hot sauce if desired.

Build the sandwich

Spread the mayo-hot sauce mixture evenly on the untoasted side of one slice of bread. On the other slice spread the cranberry sauce. Layer the toasted bread (mayo side up) with the sliced turkey (arrange to cover the bread evenly, about 10 oz), season turkey lightly with 1/4 tsp kosher salt and 1/2 tsp freshly ground black pepper across the meat. Add the 3 oz of reheated stuffing on top of the turkey, distributing it evenly. If using pepper jack, place the slice over the stuffing. Add pickled jalapeños and/or microgreens or arugula if using. Close the sandwich with the cranberry-coated bread, toasted side out.

Grill to meld flavors

Return the assembled sandwich to the skillet, panini press, or griddle. If using a skillet, press down with a heavy spatula or another pan. Grill 2–3 minutes per side over medium heat (or 4–5 minutes in a press) until the cheese melts (if used) and the outside is crisp and golden, rotating once for even browning. Watch so cranberry sauce does not leak excessively.

Rest and slice

Transfer the sandwich to a cutting board and let rest 1 minute to allow fillings to set. Slice the sandwich in half on the diagonal with a sharp knife to prevent squashing. Serve immediately with extra cranberry sauce or hot sauce on the side if desired.
