Portion Meats and Cheese

Select thin-sliced Genoa salami (≈3.2 oz), capicola (≈3.2 oz), and prosciuttini (≈3.2 oz). Arrange in stacked layers on a plate so they’re ready to assemble. Place 6 slices of provolone nearby.

Prepare Vegetables

Slice the tomato into 1/4-inch thick rounds (about 3–4 slices). Thinly slice the onion into rings and separate. Tear or chop the washed lettuce into sandwich-sized pieces and pat dry. Lightly season the tomato slices with a pinch (about 1/8 tsp) of salt and a grind of black pepper, then set aside so juices settle.

Make Dressing

In a small bowl combine 1 tsp red wine vinegar, 1 tsp extra-virgin olive oil, 1 tsp Dijon mustard, 1 tbs mayonnaise, 1/4 tsp dried oregano, 1/4 tsp salt and 1/8 tsp freshly ground black pepper. Whisk until smooth.

Assemble Sandwich

Split the Italian roll lengthwise. Spread the mayonnaise-mustard dressing evenly on both cut sides of the roll. On the bottom half layer the meats: arrange the salami, then capicola, then prosciuttini, slightly overlapping. Add the 6 slices of provolone over the meats. Top cheese with the tomato slices, then the onion rings, and finally the lettuce. Drizzle any remaining dressing over the lettuce if desired.

Finish and Serve

Close the sandwich and, if desired, press gently and cut in half on a diagonal. Wrap tightly for takeaway or serve immediately. For delivery, wrap in parchment and place in a vented sandwich bag so bread stays crisp. Total sandwich weight yields one generous 8–10 inch Classic Italian.
