Grilled Sourdough
Housemade Jam (Mixed Berry)
Nutella Spread
Garnish & Serving
Method
Housemade Jam (Mixed Berry)
- 1
Prepare berries
If using large berries (strawberries), hull and quarter them so they break down easily. Leave small berries whole.
- 2
Cook the fruit
Place the prepared berries, granulated sugar, lemon juice, and water in a medium saucepan over medium heat. Stir to combine and bring to a gentle simmer.
- 3
Simmer and reduce
Continue to simmer for 12–18 minutes, stirring occasionally and pressing fruit against the side of the pan with a wooden spoon to release juices. If using pectin, sprinkle it in at the start of the simmer and stir well.
- 4
Check set
To test for set, drop a small spoonful on a chilled plate; after a minute it should wrinkle when pushed. If it's still loose, simmer another 3–5 minutes. Remove from heat when desired thickness is reached.
- 5
Nutella Spread
- 6
Spoon Nutella into a small bowl. If Nutella is very thick or firm, microwave in 10-second intervals, stirring between each, until spreadable (about 10–20 seconds) or stir in 1 tablespoon heavy cream to loosen the texture for easier spreading. Keep warm or at room temperature.
Grilled Sourdough
- 7
- 8
Butter the bread
Spread about 1/2 tablespoon of unsalted butter on one side of each slice of sourdough. For extra flavor, sprinkle a small pinch of coarse sea salt over the buttered sides.
- 9
- 10
Finish
Remove bread from heat and set on a cooling rack for 1 minute so butter firms slightly and bread stays crisp.
Assembly & Serving
- 11
Spread about 1 tablespoon of housemade jam on four slices of grilled sourdough and about 2 tablespoons of Nutella on the remaining four slices. For an open-faced presentation, split halves: place jam and Nutella side-by-side on each slice as desired.
- 12
Optional: sprinkle toasted chopped hazelnuts over the Nutella-topped slices and dust powdered sugar lightly over jam-topped slices. Garnish with mint leaves if using.
- 13
Serve immediately while bread is warm and crisp. Leftover jam can be refrigerated up to 2 weeks; Nutella should be stored according to package instructions.
