Method
Bread & Assembly
- 1
Prep and grill ciabatta
Preheat grill or grill pan to medium-high. Slice the ciabatta loaf into 12 slices about 1/2 inch thick. Brush both sides lightly with 3 tablespoons extra-virgin olive oil and sprinkle with 1 teaspoon salt and 1/2 teaspoon black pepper distributed across slices. Grill slices 1–2 minutes per side until char marks appear and bread is warmed and crisp at the edges. Set on a wire rack to keep crisp while you finish other components.
Roasted Tomatoes
- 2
Roast tomatoes
Preheat oven to 400°F (200°C). In a baking dish, combine 400 g cherry tomatoes, 3 thinly sliced garlic cloves, 2 tablespoons olive oil, 1 teaspoon balsamic vinegar, 1/2 teaspoon dried oregano, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Toss to coat. Spread tomatoes in a single layer and roast for 18–22 minutes, until skins blister and juices are syrupy. Remove and let cool 5 minutes. If desired, gently crush a few tomatoes with the back of a spoon to release more juices for topping.
Basil Pesto
- 3
Make pesto
In a food processor, combine 2 cups packed fresh basil leaves, 1/2 cup grated Parmesan, 3 tablespoons pine nuts (or walnuts), and 1 garlic clove. Pulse until coarsely chopped. With the processor running, slowly drizzle in 6 tablespoons olive oil until the mixture emulsifies into a spreadable paste. Add 1 teaspoon lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; pulse once to combine. Taste and adjust salt or lemon as needed. If too thick, add up to 1 tablespoon more olive oil.
Eggs & Finish
- 4
Cook eggs
Heat a large nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and 1 teaspoon olive oil to the pan. Crack 6 large eggs into the pan, spacing them so they don't touch. For sunny-side-up: cook gently 3–4 minutes until whites are set but yolks still runny. For over-easy: cook 2–3 minutes, carefully flip each egg and cook 20–30 seconds more. Season eggs lightly with a pinch of salt and pepper.

Assemble bruschetta
Spread about 1 teaspoon of basil pesto on each grilled ciabatta slice (reserve any extra pesto for serving). Top each slice with a spoonful (about 1–2 tablespoons) of roasted tomatoes, including some of the tomato juices. Place a cooked egg atop each tomato-topped slice. Garnish with fresh basil leaves and a light sprinkle of flaky sea salt (about 1/8 teaspoon per serving) if using.
