    Prep and Marinate Steak

    Pat the steak dry with paper towels. If not pre-sliced very thin, partially freeze the steak for 20–30 minutes, then slice thinly against the grain. Place sliced steak in a bowl and add 2 tbs vegetable oil, 1 tbsp soy sauce, 1 tsp Worcestershire, 1 tsp minced garlic, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Toss to coat and let sit at room temperature for 10–15 minutes (or refrigerate up to 2 hours).

    Cook Steak

    Heat a large cast-iron skillet or griddle over medium-high heat until very hot. Add the marinated steak in an even layer (cook in two batches if needed to avoid crowding). Sear for 1–2 minutes until browned, then stir and spread again until cooked through but still juicy, about 2–3 minutes total. Remove cooked steak to a plate and keep warm. Reserve any pan juices for flavor.

    Sauté Onions and Mushrooms

    In the same skillet (wipe out excess if burnt, but leave flavorful brown bits), add 1 tbs butter and 1 tbs olive oil over medium heat. Add the thinly sliced onion and a pinch of 1/2 tsp salt. Sauté, stirring occasionally, until onions are soft and beginning to caramelize, about 8–10 minutes. Add the sliced mushrooms and optional peppers and continue to cook until mushrooms release their liquid and it evaporates and vegetables are nicely browned, about 5–7 minutes. Season with 1/4 tsp black pepper and additional salt if needed.

    Combine Steak and Vegetables

    Return the cooked steak to the skillet with the onions, mushrooms, and peppers. Toss and heat together for 1–2 minutes so flavors meld and steak reheats while keeping juices.

    Toast Rolls

    Split the hoagie rolls and butter the cut sides with 1 tbs unsalted butter. Place the rolls butter-side down on a separate skillet or griddle over medium heat and toast until golden and crisp, about 1–2 minutes. Remove from heat.

    Melt Cheese Over Filling

    With the steak-vegetable mix still in the skillet, reduce heat to low. Arrange the white American cheese slices over the steak mixture—use 2–3 slices per sandwich so cheese is melty and abundant. Cover the skillet with a lid for 30–60 seconds until the cheese is melted and gooey. Alternatively, scoop the meat-cheese onto the toasted rolls and arrange extra slices on top, then briefly place under a broiler to melt.

    Assemble Sandwiches

    Divide the cheesy steak and vegetables evenly between the two toasted rolls. If using, spread 1 tbs mayonnaise inside each roll before filling. Press gently and serve immediately while hot.
