Place a pizza stone or an inverted baking sheet on the middle rack of your oven and preheat to 500°F (260°C) for at least 30 minutes. If you don’t have a stone, preheat oven to 475°F (245°C) with a baking sheet.

Lightly dust a work surface with the 2 tablespoons flour. Stretch or roll the 1 lb dough into a 12–13-inch round (or rectangle if using a sheet). Transfer the shaped dough to a piece of parchment paper or a well-floured pizza peel. Brush the dough edge lightly with 1 tablespoon olive oil to promote browning.

In a small bowl combine 3 tablespoons tomato sauce, 1 teaspoon minced garlic, 1 teaspoon dried oregano, 1 teaspoon salt and 1 teaspoon black pepper. Stir until smooth. Taste and adjust salt/pepper as needed. Spread an even thin layer of the seasoned tomato sauce over the stretched dough, leaving a 3/4-inch border for the crust.

Distribute the 6 ounces of torn or sliced mozzarella evenly across the sauced dough. Tear the 3 ounces speck into pieces and scatter them evenly; leave some pieces near the center where eggs will go so the speck warms and crisps while baking. If using the optional sliced tomato, arrange slices sparingly between cheese pieces so moisture is controlled.

Using the parchment or peel, transfer the pizza to the preheated stone or baking sheet. Bake for 6 minutes to set the crust and start melting the cheese. Keep the oven at 500°F (260°C) or the temperature you preheated to.

Carefully remove the pizza from the oven. Using the back of a spoon, make three shallow wells in the cheese near the center third of the pizza spaced evenly. Crack one large egg into each well, keeping yolks intact. Quickly return the pizza to the oven and continue baking for 4–6 minutes more, until egg whites are set but yolks remain sunny and slightly runny (cook longer for firmer yolks). Total bake time typically 10–12 minutes depending on oven and thickness.

When eggs reach desired doneness, remove the pizza from oven. Scatter fresh basil leaves over the hot pizza. Sprinkle 1 teaspoon flaky sea salt, 1 teaspoon cracked black pepper and optional 1 teaspoon red pepper flakes evenly. Let pizza rest for 2 minutes to set slightly.

slice & serve
Use a pizza cutter or sharp knife to slice the pizza into 3–4 pieces (one egg per slice). Serve immediately so yolks remain runny for dipping. Provide extra salt/pepper at the table if desired.
