Method

Sweet Pepper Aioli

    Combine vegan mayonnaise, chopped roasted red bell pepper, lemon juice, maple syrup, smoked paprika, 1/4 tsp salt and 1/8 tsp black pepper in a small bowl.

    Use a fork or small immersion blender to mash and emulsify until mostly smooth with small pepper pieces remaining. Taste and adjust seasoning; refrigerate while preparing the sandwich so flavors marry.

Sandwich Assembly & Cooking

    Toast and heat

    Split the English muffin or sandwich bun and toast until golden. Preheat a nonstick or cast-iron skillet over medium heat and add 1 tablespoon neutral oil.

    Cook plant-based sausage

    Place the two plant-based sausage patties in the preheated skillet. Cook 3–4 minutes per side, pressing gently with a spatula so they contact the pan evenly, until nicely browned and cooked through (follow package instructions if different). Reduce heat slightly if they brown too quickly.

    Cook hash brown

    In the same skillet (add a touch more oil if needed), cook the hash brown patty according to package directions or until crisp and golden on both sides, about 3–5 minutes per side. Transfer to a paper towel-lined plate and season lightly with a pinch of the reserved 1/4 tsp salt and 1/8 tsp black pepper.

    Cook just egg (or tofu scramble)

    Wipe the skillet if necessary and return to medium-low heat. Pour the Just Egg liquid (or prepared tofu scramble) into the skillet and cook, stirring gently, until just set but still soft, about 2–3 minutes. Season with a pinch of salt and pepper. If using a firm folded style, cook as an omelet and fold to fit the sandwich.

    Melt cheese on sausage

    Return the cooked sausage patties to the skillet for 30–45 seconds, top each with a slice of plant-based cheddar, and cover briefly or drizzle a teaspoon of water next to them and cover to steam and melt the cheese slightly, about 30–45 seconds.

    While the cheese is melting, slice the avocado and season lightly with a pinch of salt and pepper.

    Assemble the sandwich: spread 1–2 tablespoons of sweet pepper aioli on both toasted muffin halves. Place the bottom half down, then the melted-cheese sausage patties (stack if needed), then the cooked just egg, the crispy hash brown, sliced avocado, and top with the other muffin half.

    Press gently, slice in half if desired, and serve immediately while hot.
