Prepare egg whites
Separate 4 large eggs and reserve the yolks for another use. In a medium bowl, combine 4 large egg whites and the optional 1/2 whole egg if using (this adds a touch of richness). Add 1 tbsp milk or water, a pinch of fine sea salt, and a pinch of freshly ground black pepper. Whisk vigorously until mixture is frothy and slightly thickened, about 20–30 seconds.

Prepare scallions
Trim root ends and any wilted tips from 3 scallions. Slice white and light-green parts into 1/8–1/4 inch slices. Reserve dark-green tops for garnish if desired.

Grill scallions
Heat a small nonstick or cast-iron skillet over medium-high heat until hot. Add 1 tsp olive oil and 1 tbsp unsalted butter. When butter foams, add sliced scallions in a single layer. Cook, turning occasionally, until they are charred at the edges and softened, about 3–4 minutes. Season lightly with a pinch of salt. Transfer scallions to a plate and set aside.

Grate cheese
Grate 1 oz white cheddar finely so it will melt quickly. Keep ready near the stove.

Give the egg-white mixture one quick re-whisk. Pour the whites into the skillet and immediately reduce heat to low. Using a rubber spatula, gently pull the cooked edges toward the center while tilting the pan so uncooked whites flow to the edges. Continue for 1–2 minutes until the surface is mostly set but still slightly glossy on top.

Evenly distribute the grilled scallions over one half of the omelet. Sprinkle the grated white cheddar (1 oz) over the scallions. If using, add chopped dark-green scallion tops or 1 tsp chopped chives.

Slide the omelet onto a plate, season with an extra pinch of salt and pepper if desired, and finish with a tiny squeeze of lemon (about 1/4 wedge) to brighten flavors if using.
