Prepare plantains

Rinse the plantains and pat dry. Using a sharp knife, trim about 1/4 inch off both ends. Make a shallow lengthwise slit in the skin (just through the peel), then peel the plantains by slipping your thumb under the skin and pulling it off. If the peel is stubborn, score the peel into thirds and remove in pieces. Slice each plantain on the diagonal into 1/3–1/2-inch thick pieces for larger, tender slices, or into 1/4-inch thick rounds for crisper quickly-caramelized pieces.

Heat oil

Pour the vegetable oil into a heavy skillet (cast-iron or stainless steel recommended) so it reaches about 1/8–1/4 inch up the side. Heat the oil over medium heat until shimmering and a small piece of plantain sizzles gently when added — about 325–350°F (160–175°C). If you don’t have a thermometer, look for a steady shimmer but not smoking.

Fry plantains

Working in a single layer (don’t overcrowd the pan), add the plantain slices to the hot oil. Fry for 2.5–4 minutes per side depending on thickness and ripeness: thinner pieces and riper plantains will brown and caramelize faster. Use tongs or a slotted spatula to turn slices when the underside is golden brown and caramelized. Adjust heat to maintain a steady sizzle but avoid burning.

Drain and season

Transfer the fried plantains to a plate lined with paper towels to drain excess oil. Immediately sprinkle with the fine sea salt to taste while still hot so the salt adheres and flavors the plantains.

Butter-lime glaze (optional)

If you want a gloss and tang: in a small skillet or microwave, melt the butter and stir in the lime juice. Drizzle the warm butter-lime mixture over the drained plantains and toss gently to coat. This adds richness and brightness.

Garnish and serve

Sprinkle chopped cilantro or parsley over the plantains for color and freshness. Serve immediately while warm with optional hot sauce or aioli on the side for dipping. Enjoy as a side, snack, or small dessert.
