Leche de Tigre (Citrus & Fish Marinade)

Prepare fish
Pat the fish dry with paper towels. Trim away any membranes and slice into 1/2 inch (1–1.5 cm) cubes. Keep the fish as cold as possible; place on a tray over a bowl of ice while assembling other components.

Blend marinade
In a blender or food processor, combine lime juice, lemon juice, fish stock, peeled garlic clove, sliced ginger, cilantro leaves, sea salt, and black pepper. Pulse briefly until the mixture is smooth but still bright and slightly textured (about 6–8 short pulses). Do not overblend to avoid warming the mix.

Strain and cool
Strain the blended mixture through a fine sieve into a bowl to remove fibrous bits for a clean leche. Add ice cubes to the bowl to chill the leche quickly; remove the ice just before pouring over the fish (or use very cold ice and a slotted spoon to avoid excessive dilution).

Marinate fish briefly
Place the fish cubes in a shallow bowl or on chilled plates. Pour just enough leche de tigre over the fish to mostly cover (about 3/4 cup per serving). Marinate for 6–10 minutes at most — you want the fish firm and slightly opaque but not fully 'cooked' throughly soft. Reserve remaining leche for serving alongside.
Limo Pepper Sauce & Garnish

Prepare the limo pepper by cutting off stem and removing seeds for a milder heat (reserve some seeds if you want more fire). Finely mince the pepper or finely chop by hand. In a small bowl combine minced limo, lime zest, olive oil, and sea salt. Taste and adjust salt or lime zest. Spoon a small amount (about 1/2 tsp) of this limo garnish over each portion of fish just before serving for a bright spicy note.
Onions & Pickle

Place thinly sliced red (and white, if using) onions in a bowl. Whisk rice vinegar, water, sugar and salt until dissolved. Pour the pickling liquid over the onions, toss to combine, and let sit for 10–15 minutes. Drain lightly before using — onions should be tangy and crisp, not soggy. Keep chilled until plating.

Prepare accompaniments: If choclo is not pre-cooked, boil the corn ear in salted water for 10–12 minutes until tender, then slice kernels or remove a 2–3 inch section for plating. Boil or steam the sweet potato until tender (15–20 minutes depending on size), peel if needed and cut into 1/2-inch rounds. Toast or warm the cancha/roasted corn kernels briefly in a dry skillet over medium heat for 2–3 minutes to refresh their crunch.

To assemble each serving: place the chilled fish cubes in the center of a shallow bowl or small plate. Spoon 3/4 cup of the cold strained leche de tigre over the fish so the cubes are bathed but still visible. Arrange 1–2 tablespoons of picked onions on top or to the side. Add 2–3 small sweet potato rounds and a portion of choclo (about 2–3 tablespoons or one small ear piece) alongside. Sprinkle 1–2 tablespoons of cancha over the dish for crunch and scatter cilantro leaves.

Finish with limo garnish: dot the limo pepper sauce in small amounts across the fish, or drizzle a little extra virgin olive oil if desired. Serve immediately with extra leche de tigre on the side and lime wedges.
Finishing & Serving Notes

If the leche de tigre tastes too intense, dilute a little with the reserved cold water (start with 1–2 tablespoons). Keep the dish very cold until served. Consume within 30–40 minutes of assembling for best texture and flavor.
