Prepare marinade

In a medium mixing bowl, combine the fresh lime juice, fresh lemon juice, and fish stock (or clam juice). Add the smashed garlic, sliced ginger, cilantro stems, sliced aji limo (or serrano), 1 tsp salt, 1/4 tsp black pepper and 1 tablespoon olive oil. Stir to combine.

Marinate the fish

Place the small-diced white fish into the citrus mixture and gently stir so all pieces are coated. Let the fish marinate in the refrigerator for 8–12 minutes — the citrus will 'cook' the fish to opaque. Do not over-marinate to keep a tender texture.

Finish leche de tigre

After marination, strain the mixture through a fine mesh strainer into a bowl, pressing lightly on solids to extract flavorful juices. Reserve the marinated fish pieces separately. Chill the strained leche de tigre liquid briefly, then add 1 cup ice and pulse with an immersion blender (or short spin in a blender) for 10–15 seconds to slightly emulsify and chill. Taste and adjust seasoning with a pinch more salt or a squeeze of lime if needed.

Fried Calamari

Heat oil

Pour neutral oil into a medium saucepan or deep skillet to a depth of 1.5–2 inches. Heat to 350°F (175°C) over medium-high heat. If you don't have a thermometer, test by dropping a small bit of batter—if it sizzles and rises quickly, the oil is ready.

Coat calamari

In a shallow bowl, whisk together the all-purpose flour, cornstarch, 1/2 tsp salt and 1/4 tsp black pepper. Pat the calamari dry with paper towels, then toss the rings and tentacles in the flour mixture to lightly coat, shaking off excess.

Fry calamari

Fry the coated calamari in batches for 1.5–2.5 minutes per batch, until golden and crisp. Avoid overcrowding. Remove with a slotted spoon to a paper towel–lined tray and season lightly with a pinch of salt while hot. Keep warm in a low oven (200°F / 95°C) if necessary.

Serve calamari

Serve immediately alongside the assembled leche de tigre and garnishes so it retains crispness.

Prepare onion & choclo

While fish is marinating and calamari is frying, put the thinly sliced red onion into a small bowl and cover with cold water for 5 minutes to take the edge off, then drain and pat dry. If using fresh choclo, briefly blanch kernels in boiling salted water for 1 minute, drain and cool. If using canned or frozen, ensure well drained.

Plate leche de tigre

Place a few spoonfuls of the marinated fish pieces into shallow cocktail bowls or small plates. Pour 1/4 cup of the strained, slightly emulsified leche de tigre liquid over the fish in each serving (adjust to taste).

Add garnishes

Top each portion with a small mound of thinly sliced red onion, 2–3 tablespoons choclo kernels, a sprinkle (about 1 tablespoon) of cancha, and a few chopped cilantro leaves. Arrange 3–4 plantain chips and a few pieces of fried calamari beside or on top for texture contrast. Add a slice of lime or lemon wedge and a thin slice of limo pepper for heat.

Final touch

If desired, spoon a teaspoon of extra leche de tigre over the calamari to tie flavors. Serve immediately so calamari and chips remain crunchy. Provide extra plantain chips or cancha on the side.
