    Cook potatoes

    Place whole, unpeeled yellow potatoes in a large pot and cover with cold water by 1 inch. Add 1 teaspoon salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are tender when pierced with a knife, about 20–25 minutes depending on size.

    Peel and mash

    Drain potatoes and let them steam-dry in the hot pot for 2–3 minutes to remove excess moisture. While still warm, peel the potatoes (skins should slip off easily). Pass potatoes through a ricer or mash very smoothly with a potato masher—avoid lumps.

    Flavor and emulsify

    While the mashed potatoes are still warm, add 4 tablespoons fresh lime juice, 3 tablespoons vegetable oil, 2 tablespoons aji amarillo paste, 1 teaspoon ground cumin, 2 teaspoons salt, and 1 teaspoon black pepper. Work the mixture with a wooden spoon or spatula until smooth, glossy, and spreadable. Taste and adjust lime, salt, or aji amarillo as needed. If the mash feels dry, add up to 1 tablespoon more oil or 1 tablespoon warm water to reach a soft, moldable consistency. Cover and let cool to room temperature.

Filling — Classic Tuna Filling

    Prepare ingredients: drain and flake 12 oz tuna; finely dice 1/4 cup red onion and 2 tablespoons celery; rinse and chop 1 tablespoon capers; chop cilantro.

    Mix filling: In a medium bowl combine flaked tuna, 4 tablespoons mayonnaise, diced onion, diced celery, chopped capers, 2 tablespoons chopped cilantro, 1 tablespoon lime juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Fold gently until evenly combined. Taste and adjust seasoning. Chill briefly if desired to let flavors meld.

    Prepare mold or plate

    You can assemble causa in a ring mold, cake ring, or shape by hand. Lightly oil the inside of the ring or work surface to prevent sticking. Have sliced hard-boiled eggs, sliced avocado, and olives ready.

    Layering (single-serving ring or small cake): Press half of the cooled potato mixture firmly into the bottom of the mold to create an even layer about 3/4 inch thick. Smooth the surface with a spatula. Spread the tuna filling evenly over the potato layer, leaving a small border if using a ring. Gently arrange sliced hard-boiled eggs and some avocado slices or alternate on top of the tuna if desired. Press the remaining potato mixture on top to form the final layer, smoothing the top. Refrigerate assembled causa for at least 30 minutes to set; this helps it hold its shape when unmolded.

    Unmold and garnish: Run a thin knife around the inside edge of the ring to loosen, then invert or lift the ring off carefully. If the ring is non-removable, lift out gently. Garnish the top with remaining sliced eggs, avocado slices, halved olives, extra cilantro leaves, and a small drizzle (about 1 tsp) of aji amarillo paste or lime juice for brightness. Serve chilled or at cool room temperature with lime wedges on the side.
