    Chop Vegetables

    Finely chop the onion, carrots, celery, garlic, and potatoes into small, uniform pieces to ensure even cooking.

    Prepare Spinach

    Wash the spinach thoroughly and roughly chop if the leaves are large.

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until they become soft and translucent.

    Add Garlic and Potatoes

    Stir in the minced garlic and chopped potatoes. Cook for an additional 2-3 minutes, stirring frequently.

    Add Broth and Seasonings

    Pour in the vegetable broth and water. Add the salt, black pepper, thyme, and bay leaf. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the potatoes are tender.

    Once the potatoes are cooked, add the chopped spinach to the pot. Stir and cook for another 5 minutes until the spinach is wilted.
